Between the Sainte-Victoire and Sainte-Baume, near Aix-en-Provence and Brignoles, near Saint-Maximin, Château d'Ollières is rich in ancient history. Revived by the Rouy family dawn of this century, this ancient manor is now a flagship of the Coteaux Varois in Provence. It benefits, in fact, an ideal terroir for wine growing. From floor to climate, all combine to produce great wines. A gift of nature which the proprietors were able to get the most by adopting rigorous cultivation methods and environmentally friendly and winemaking techniques combining tradition in this its best in advanced technology.
The Coteaux Varois vineyard in Provence is located in the heart of the "Provence limestone." In ponds and narrow valleys, production is strictly delimited within twenty-eight towns grouped around Brignoles, once the summer residence of the Counts of Provence. Its soil is characterized by marked relief that culminate from 600 to over 1000 meters for the range of the Sainte-Baume.
The wine region of Provence unfolds between the Durance, Les Coteaux de Pierrevert and the Mediterranean, from Nice to Arles, in the Alpes-Maritimes, Var, Bouches-du-Rhone and Alpes de Hautes Provence. Vineyard Provence is divided into four designations: Slopes of Pierrevert, Cotes de Provence, Aix en Provence Slopes and Slopes of Var and 5 appellations: Cassis, Bellet, Bandol and Baux. The vineyards of Provence offers rosés famous but also excellent red wines and some white wines (Bellet, Cassis, Bandol). The region has 21 main varieties and some complementary one. The wines are composed of assemblies whose percentages vary designations. The vines are planted on 3 types of terrain shallow and arid: limestone terraces (Sainte Baume, Alpilles, Alpes de Haute-Provence), crystalline floors made of granite and schist (Toulon, Saint-Raphaël) and soil siliceous sandstone and (Brignoles, Le Luc, Les Arcs, Frejus, Hyeres).
